How it works
A language model has been trained on large amounts of text and has learnt how language fits together. It predicts, word by word, what reasonably comes next, and that is how it both understands a question and phrases an answer.
The model knows nothing about a particular company to begin with. What makes it useful in customer service is that it is given the company's own material to answer from, and clear instructions on how to behave.
